Slow Roasted Salmon with Citrus Salsa Verde is a flavorful and healthy dish. It combines tender salmon with a fresh and zesty salsa.


Ingredients

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup fresh parsley, chopped
  • 1 cup cherry tomatoes, halved
  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced
  • 1 lime, zested and juiced
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon capers, rinsed and chopped
  • 1 teaspoon Dijon mustard
  • 1 pinch red pepper flakes (optional)

Instructions

  1. Set your oven to 275°F (135°C) to prepare for slow roasting.
  2. Place the salmon fillets skin-side down on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets and season with salt and pepper.
  3. Place the salmon in the preheated oven and roast for about 25-30 minutes, or until it reaches your desired doneness.
  4. While the salmon roasts, prepare the salsa verde by combining parsley, cherry tomatoes, orange zest, lemon zest, lime zest, red onion, capers, Dijon mustard, and the juice from the oranges, lemons, and limes in a medium bowl. Mix well and add salt and pepper to taste.
  5. If you like a touch of heat, sprinkle in some red pepper flakes to the salsa mixture.
  6. Once done, remove the salmon from the oven and let it rest for about 5-10 minutes.
  7. Spoon the citrus salsa verde generously over the salmon fillets before serving.
