Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Lightly grease the inside of your slow cooker with cooking spray or olive oil.
  2. Season the chicken breasts with salt, pepper, paprika, thyme, and oregano. Rub the spices evenly over the chicken.
  3. Place the chopped onion and minced garlic at the bottom of the slow cooker.
  4. Lay the seasoned chicken breasts on top of the onions and garlic.
  5. Sprinkle the rice evenly over the chicken.
  6. Carefully pour the chicken broth over the ingredients, ensuring the rice is submerged.
  7. Squeeze the lemon juice and add the lemon zest into the slow cooker.
  8. Drizzle the olive oil over the top for added richness.
  9. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  10. After the cooking time, check that the chicken is cooked through and the rice is tender.
  11. Using two forks, shred the chicken directly in the slow cooker and stir to mix it with the rice and broth.
  12. Sprinkle with fresh parsley before serving for a burst of color and flavor.
