Description

A light and flavorful dip perfect for poolside gatherings and summer parties. This skinny poolside dip is easy to make and can be customized to your spice preference.


Ingredients

  • 8 ounces cream cheese, room temperature
  • 1 packet dry ranch dressing mix
  • 15-ounce can corn, drained
  • 1 small can black olives, diced
  • 1 cup red bell pepper, finely diced
  • 4 ounces green chilis, drained (optional)
  • 1 whole jalapeño, finely chopped (optional)

Instructions

  1. In a large bowl, combine the room-temperature cream cheese and dry ranch dressing mix. Stir or beat until smooth.
  2. Add the drained corn, diced olives, finely diced red bell pepper, and optional green chilis. If desired, add the finely chopped jalapeño for spice. Stir until all ingredients are well incorporated.
  3. For best flavor development, chill the skinny poolside dip in the refrigerator for at least 30 minutes.
