Ingredients

  • 3 cups cooked white rice, preferably day old, loosened
  • 2 tablespoons neutral-flavoured oil
  • 1 1/2 cups frozen peas and carrots, thawed
  • 1 medium onion, finely diced
  • 1 tablespoon garlic, minced
  • 1 cup frozen shrimp, peeled and deveined
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Heat 1 tablespoon oil in a large pan over medium-high heat. Add shrimp and cook until opaque and just cooked through, about 2–3 minutes. Remove shrimp and set aside.
  2. In the same pan, add remaining oil. Add diced onion and sauté until translucent and tender, approximately 2 minutes.
  3. Add minced garlic to the onion and cook for 30 seconds, stirring constantly until fragrant.
  4. Add the day old rice, peas, and carrots to the pan. Mix thoroughly to break up any clumps and heat the vegetables, cooking for 2–3 minutes.
  5. Drizzle soy sauce and sesame oil over the mixture. Return cooked shrimp to the pan. Toss and stir all components until evenly coated and heated through, about 2 minutes.
  6. Taste for seasoning. Serve hot immediately after mixing.
