Instructions

  1. Soak the dried guajillo chilies in hot water for about 15 minutes until they soften.
  2. In a blender, combine the softened chilies, fire-roasted tomatoes, apple cider vinegar, and your chosen spices. Blend until smooth.
  3. Transfer the blended sauce to a large pot, add enough water to cover, and bring it to a simmer. Cook for about 20 minutes.
  4. Heat a skillet over medium heat. Dip each corn tortilla into the simmering broth briefly, then fry them in the skillet until crispy and golden.
  5. Fill each crispy tortilla with shredded chicken and top with fresh onion and cilantro. Serve immediately.
