- 2 tablespoons apple cider vinegar
- 8 pieces corn tortillas (For crispiness)
- 1 cup onion (Chopped, for topping)
- 1 cup cilantro (Chopped, for topping)

Instructions
- Soak the dried guajillo chilies in hot water for about 15 minutes until they soften.
- In a blender, combine the softened chilies, fire-roasted tomatoes, apple cider vinegar, and your chosen spices. Blend until smooth.
- Transfer the blended sauce to a large pot, add enough water to cover, and bring it to a simmer. Cook for about 20 minutes.
- Heat a skillet over medium heat. Dip each corn tortilla into the simmering broth briefly, then fry them in the skillet until crispy and golden.
- Fill each crispy tortilla with shredded chicken and top with fresh onion and cilantro. Serve immediately.
- Plate the tacos with a small bowl of the rich consommé on the side for dipping.
