Description

Sheet Pan Steak Gyros are a quick and delicious dinner inspired by street food. Flank or skirt steak is seasoned with a blend of spices, roasted on a sheet pan, and served in warm pitas with creamy feta tzatziki sauce and your favorite toppings.

  • Zest of 1 lemon
  • Salt and chili flakes to taste
  • 2 tbsp extra virgin olive oil
  • For the toppings and serving:
  • 46 fresh pitas or naan bread
  • 1/2 cup feta cheese, crumbled
  • Tzatziki sauce (homemade or store-bought)
  • Pickled red onion
  • Shredded lettuce
  • Sun-dried tomatoes with oil
  • Pepperoncini
  • Fresh herbs (dill, basil, parsley)
  • Garlic tahini sauce (optional)

Instructions

  1. Marinate the steak: On a sheet pan, rub the steak with minced garlic, paprika, cumin, oregano, chili powder, cayenne pepper, lemon zest, and olive oil. Season with salt and chili flakes. Let the steak marinate for 20-30 minutes.
  2. Cook the steak: Preheat your oven to 475°F (245°C). Roast the marinated steak for 10-12 minutes. For a crispier texture, broil for an additional 2-5 minutes.
  3. Rest and slice steak: Let the steak rest for 10 minutes after cooking. Then, slice it thinly against the grain.
  4. Prepare tzatziki sauce: Crumble feta cheese into your tzatziki sauce for extra flavor.
  5. Warm pitas: Warm the pitas or naan bread before assembling.
  6. Assemble the gyros: Stuff the warm pitas or naan with the sliced steak and shredded lettuce.
  7. Add toppings: Top with the feta tzatziki sauce, pickled red onions, sun-dried tomatoes, pepperoncini, and fresh herbs. Add garlic tahini sauce if desired.
  8. Serve: Serve your sheet pan steak gyros immediately, optionally with homemade fries.
