Ingredients

  • 2 salmon fillets (about 6 ounces each)
  • 2 cups baby potatoes, halved
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, garlic powder, salt, and black pepper.
  3. Spread the potatoes on a baking sheet in a single layer. Roast in the oven for 20-25 minutes or until golden and fork-tender.
  4. In a small bowl, whisk together mayonnaise, lemon juice, smoked paprika, minced garlic, salt, and black pepper. Adjust seasoning to taste and set aside.
  5. In a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt and pepper.
  6. Once the oil is hot, place the salmon fillets skin-side down in the skillet. Sear for about 4-5 minutes, until the skin is crispy.
  7. Carefully flip the salmon and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Remove the salmon from the skillet and let it rest briefly. Garnish with fresh parsley.
  9. On plates, arrange the roasted potatoes next to the salmon fillets. Add a generous dollop of paprika aioli on the side.
