- 1 pound boneless skinless chicken breast (Cut into cubes)
- 1/2 cup sweet chili sauce (Can substitute with honey for spiciness)
- 2 tablespoons soy sauce (Use tamari for gluten-free)
- 2 tablespoons rice vinegar (Apple cider vinegar can be used)
- 1 tablespoon sesame oil (Neutral oil can also be used)
- 1 teaspoon salt (Adjust to taste)
- 1/2 teaspoon black pepper (Adjust to taste)
- 2 tablespoons vegetable oil (Can use canola or peanut oil)
- 2 cups bell peppers (Mixed colors, sliced)
- 1 medium onion (Sliced)
- 3 cloves garlic (Minced)
- 1 tablespoon ginger (Grated fresh ginger preferred)
- 2 cups jasmine rice (Cooked)
- 1/4 cup green onions (Sliced for garnish)
- 2 tablespoons sesame seeds (For garnish)
Instructions
- In a bowl, mix together sweet chili sauce, soy sauce, rice vinegar, sesame oil, salt, and pepper. Add cubed chicken and let it marinate for 20–30 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Stir-fry sliced onion and bell peppers for 3–4 minutes.
- Stir in minced garlic and grated ginger, cooking for 1 minute. Remove vegetables and set aside.
- Add marinated chicken and the marinade to the skillet. Cook for 6–8 minutes, stirring until the chicken is cooked through.
- Return the sautéed vegetables to the skillet, mixing together for 2 more minutes.
- Spoon the savory chicken and vegetables over cooked jasmine rice in bowls.
- Top each bowl with sliced green onions and sesame seeds.
Notes
- Adjust the seasoning according to your taste.
- Serve with extra chili sauce if desired.
