Ingredients
- 1 pound Salmon Fillets
- 2 tablespoons Olive Oil or avocado oil
- 1 teaspoon Paprika
- 1 teaspoon Garlic Powder
- 1 teaspoon Chili Powder
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 1 cup Unsweetened Coconut Milk
- 2 tablespoons Thai Sweet Chili Sauce
- 2 tablespoons Chili Crisp
- 1 tablespoon Lemon Juice
- 2 tablespoons Chopped Cilantro or Parsley
- Lemon or Lime Wedges for serving
Instructions
- Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Remove the skin from the salmon, pat it dry, and cut it into 1-inch cubes.
- Combine all seasonings (paprika, garlic powder, chili powder, salt, pepper) in a mixing bowl and rub the mixture evenly over the salmon cubes.
- Arrange the seasoned salmon bites on the prepared baking sheet in a single layer.
- Bake for about 5 minutes, or until the salmon is just warm and pink inside (135°F or 57°C internal temperature).
- While the salmon is baking, combine all sauce ingredients (coconut milk, Thai sweet chili sauce, chili crisp, lemon juice) in a small bowl and stir well until smooth.
- Transfer the cooked salmon bites to a serving plate.
- Drizzle the spicy chili crisp sauce over the salmon bites.
- Garnish with chopped cilantro or parsley and extra chili crisps if desired.
- Serve immediately, optionally with lemon or lime wedges for squeezing over the top.
