- 1 cup fish or chicken broth

Instructions
- Prepare the Ingredients: Cut the cod fillets into bite-sized chunks. Dice the onion and bell pepper, and mince the garlic.
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the onion and cook until translucent, about 5 minutes. Stir in the garlic, saffron, smoked paprika, and cayenne pepper, and cook for another minute.
- Add Vegetables: Incorporate the diced bell pepper and cook for 3-4 minutes.
- Simmer the Stew: Pour in the canned diced tomatoes and broth. Stir well and bring to a simmer.
- Cook the Cod: Season the cod chunks with salt and pepper and add them to the pot. Simmer for about 10 minutes, or until the cod is cooked through.
- Finish with Cream: Reduce heat to low and stir in the heavy cream. Heat through without boiling.
