Ingredients

  • 300 g Strawberries (hulled and quartered)
  • 150 g Raspberries
  • 150 g Blueberries
  • 1.25 cups Caster (superfine) sugar
  • 115 g Unsalted butter
  • 2 large Eggs
  • 200 ml Sour cream
  • 0.5 cups Whole milk
  • 1 tsp Vanilla bean paste
  • 1.5 cups Self-raising flour
  • 1 tsp Baking powder
  • Icing (powdered) sugar (for dusting)
  • Dollop cream (to serve)

Instructions

  1. In your rice cooker bowl, mix the quartered strawberries, raspberries, and blueberries with half a cup of caster sugar. Give them a gentle bash with a wooden spoon to release some juices.
  2. In a separate large mixing bowl, cream the remaining caster sugar and unsalted butter using a whisk until light and creamy. Add the eggs one at a time, ensuring each is well mixed before adding the next.
  3. Stir in the sour cream, whole milk, and vanilla bean paste until seamlessly combined. The mixture should be smooth and rich in flavor.
  4. Gently fold in the self-raising flour and baking powder. Be careful not to overmix; just ensure the batter is well combined for a tender cake texture.
  5. Pour the cake batter over the berry mixture in the rice cooker bowl, spreading it evenly to cover the fruit.
  6. Select the Cake/Bread function on your rice cooker and set the timer for 40 minutes. Close the lid and let it do its magic until the cake is fluffy and fully cooked.
  7. Once cooked, place a strip of baking paper atop the cake, then set a plate upside down on the paper. Carefully flip the bowl to turn out the pudding. Remove the bowl to reveal a beautiful, berry-studded delight.
  8. Lightly dust with icing sugar and serve warm with a dollop of cream for that extra indulgence.
