- 300 g Strawberries (hulled and quartered)
- 150 g Raspberries
- 150 g Blueberries
- 1.25 cups Caster (superfine) sugar
- 115 g Unsalted butter
- 2 large Eggs
- 200 ml Sour cream
- 0.5 cups Whole milk
- 1 tsp Vanilla bean paste
- 1.5 cups Self-raising flour
- 1 tsp Baking powder
- Icing (powdered) sugar (for dusting)
- Dollop cream (to serve)
Instructions
- In your rice cooker bowl, mix the quartered strawberries, raspberries, and blueberries with half a cup of caster sugar. Give them a gentle bash with a wooden spoon to release some juices.
- In a separate large mixing bowl, cream the remaining caster sugar and unsalted butter using a whisk until light and creamy. Add the eggs one at a time, ensuring each is well mixed before adding the next.
- Stir in the sour cream, whole milk, and vanilla bean paste until seamlessly combined. The mixture should be smooth and rich in flavor.
- Gently fold in the self-raising flour and baking powder. Be careful not to overmix; just ensure the batter is well combined for a tender cake texture.
- Pour the cake batter over the berry mixture in the rice cooker bowl, spreading it evenly to cover the fruit.
- Select the Cake/Bread function on your rice cooker and set the timer for 40 minutes. Close the lid and let it do its magic until the cake is fluffy and fully cooked.
- Once cooked, place a strip of baking paper atop the cake, then set a plate upside down on the paper. Carefully flip the bowl to turn out the pudding. Remove the bowl to reveal a beautiful, berry-studded delight.
- Lightly dust with icing sugar and serve warm with a dollop of cream for that extra indulgence.
