- 3.5 cups Refried beans
- 8 ounces Extra-sharp cheddar
- 8 ounces Pepper jack
- 1 cup Sliced scallions
- 10 pieces Flour tortillas
- 1 recipe Tex Mex enchilada sauce
- 0.25 cup Chopped fresh cilantro
Instructions
- Preheat your oven to 375°F with a rack in the center.
- Mix the refried beans, half the cheddar, half the pepper jack, and scallions in a large mixing bowl.
- Spread one cup of the enchilada sauce evenly over the surface of your baking pan.
- Fill each tortilla by dividing the mixture evenly among them and roll each tightly.
- Arrange the filled tortillas seam-side down in the pan.
- Top the enchiladas with the remaining sauce and sprinkle the rest of the cheddar and pepper jack on top.
- Bake uncovered for about 20 minutes.
- Garnish with freshly chopped cilantro before serving.
