Ingredients

  • 3 shanks Lamb shanks (2.5 lbs)
  • 2 tsp Salt
  • 1.5 tsp Pepper
  • 3 Tablespoons Olive oil (for browning)
  • 1 cup Chopped onion
  • 1 cup Carrot
  • 1 cup Celery
  • 5 cloves Minced garlic
  • 3 cups Red wine
  • 3 cups Chicken broth
  • 4 Bay leaves
  • 7 stems Fresh thyme
  • 2 stems Fresh rosemary
  • 28 oz Crushed tomatoes
  • 2 Tablespoons Tomato paste

Instructions

  1. Season the lamb shanks with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Brown the shanks for about 7 minutes on one side, then flip and cook for another 7 minutes until golden.
  2. Set aside the browned lamb shanks on a plate.
  3. Sauté the vegetables: Add chopped carrots, onions, and celery. Cook for about 6 minutes until they soften, then add minced garlic for 2 more minutes.
  4. Combine the sauce ingredients: Pour in red wine and chicken broth, and add bay leaves, thyme, rosemary, crushed tomatoes, and tomato paste. Stir well.
  5. Nestle the lamb shanks back into the pot, ensuring the liquid covers them almost completely.
  6. Simmer by bringing to a boil, reducing to a simmer. Cover and simmer for 2.5 hours.
  7. Strain the sauce: Remove shanks and strain the vegetables from the liquid.
  8. Reduce the sauce: Increase heat, cook uncovered until it thickens, about 30 minutes.
  9. Serve the shanks over mashed potatoes, rice, or pasta with the sauce poured over.
