Ingredients
- 2 tablespoons Olive Oil
- 4 Bone-in Pork Chops (1-inch thick)
- Salt to taste
- Pepper to taste
- ½ cup Raspberry Preserves
- 2 tablespoons Balsamic Vinegar
- ½ teaspoon Thyme
- 1 teaspoon Minced Garlic
Instructions
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Season the pork chops with salt and pepper on both sides.
- Fry the pork chops for 4-5 minutes on each side until they reach an internal temperature of just under 145°F.
- In a small bowl, whisk together raspberry preserves, balsamic vinegar, thyme, and minced garlic.
- Remove pork chops from skillet, lower heat, and add raspberry mixture; simmer for 2-3 minutes.
- Return pork chops to the skillet and glaze for 1 minute on each side.
- Serve immediately, drizzling extra glaze on top.
Notes
- Garnish with fresh thyme for added flavor.
- Store leftovers in an airtight container in the fridge for up to 3-4 days.
- Freeze for up to 3 months, thaw before reheating.
