Instructions

  2. In another bowl, mix the pumpkin puree, milk, egg, vegetable oil, and vanilla extract until smooth.
  3. Slowly pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are fine. Avoid over-mixing.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with oil or butter as needed.
  5. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, approximately 2-3 minutes.
