  • 2 medium sweet potatoes, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon ground cinnamon (optional)
  • 4 oz goat cheese, crumbled
  • 1 tablespoon honey (optional)
  • 1 tablespoon fresh thyme or rosemary, finely chopped
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice sweet potatoes into 1/4-inch rounds and place on a baking sheet lined with parchment paper.
  3. Drizzle sweet potato rounds with olive oil and sprinkle with salt, pepper, and cinnamon (if using). Toss to coat evenly.
  4. Roast for 25-30 minutes, flipping halfway, until tender and slightly golden.
  5. Remove from oven and let cool slightly.
  6. Crumble goat cheese over the top of each potato round.
  7. Drizzle with honey and sprinkle with fresh thyme or rosemary.
  8. Optionally, drizzle with balsamic glaze.
