Ingredients

  • 3 to 4 pounds of beef chuck roast
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1 cup tart cherry preserves
  • 1 tablespoon apple cider vinegar
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • Fresh thyme sprigs (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the roast on all sides until browned, about 4-5 minutes each side. Remove from the pot and set aside.
  3. In the same pot, add chopped onions and cook for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
  4. Pour in a cup of beef broth and stir, scraping up any browned bits from the bottom of the pot.
  5. Return the seared roast to the pot. Add remaining beef broth, tart cherry preserves, apple cider vinegar, carrots, and celery. Bring to a simmer.
  6. Cover the pot with a lid and transfer it to the preheated oven. Cook for 3 to 4 hours, or until the beef is fork-tender.
  7. Once cooked, remove the roast from the pot and set it on a cutting board. If the sauce is too thin, place the pot on the stove over medium heat and simmer until it reduces to your desired consistency.
  8. After resting for 15 minutes, slice the pot roast against the grain.
  9. Return the sliced meat to the pot with the sauce, ensuring it’s nicely coated.
