- 500 g Rustic bread or sourdough
- 2 Red onions
- 3 cloves Garlic

- Olive oil
- 1 handful Pine nuts
- 4 tablespoons Balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C) and prepare a roasting tray.
- Sauté diced onions and garlic in a skillet with olive oil until translucent, about 5 minutes.
- Combine chopped rosemary, fennel seeds, and cubed rustic bread in the skillet, stirring until slightly toasted and fragrant, about 3-5 minutes.
- Add toasted pine nuts and drizzle balsamic vinegar into the mixture, stirring to coat evenly.
- Season the pork loin with salt and pepper, then stuff it with the herby mixture, ensuring not to overstuff.
- Roast the pork loin in the oven until the internal temperature reaches 145°F (63°C), usually taking about 50-60 minutes.
- Rest the pork for 10-15 minutes before slicing to allow the juices to redistribute.
- Optional: Garnish with additional fresh herbs for presentation.
