Ingredients

  • 1.5 kg (3 lb) pork belly, skin on
  • 1 tablespoon olive oil
  • 2 teaspoons salt (sea salt flakes recommended)
  • 1 tablespoon white vinegar
  • Freshly ground black pepper
  • 1 tablespoon Chinese five-spice powder (optional)

Instructions

  1. Preheat your oven to 150°C (300°F).
  2. Pat the pork belly dry, especially the skin, with paper towels.
  3. Score the pork skin deeply with a sharp knife, about 1 cm apart, cutting through the skin but not into the meat.
  4. Rub the pork belly with olive oil.
  5. Season the meat side with salt, black pepper, and optional Chinese five-spice powder.
  6. Place the pork belly skin-side up on a rack over a roasting pan.
  7. Pour 1 cup of water into the roasting pan.
  8. Slow roast the pork for 2.5 hours.
  9. Increase the oven temperature to 240°C (465°F).
  10. Roast for an additional 30-40 minutes until the skin is golden and crispy.
  11. Use the grill (broiler) for a few minutes if needed to achieve perfect crackling.
  12. Let the pork rest for 10 minutes before slicing and serving.
