- 1.5 kg (3 lb) pork belly, skin on
- 1 tablespoon olive oil
- 2 teaspoons salt (sea salt flakes recommended)
- 1 tablespoon white vinegar
- Freshly ground black pepper
- 1 tablespoon Chinese five-spice powder (optional)
Instructions
- Preheat your oven to 150°C (300°F).
- Pat the pork belly dry, especially the skin, with paper towels.
- Score the pork skin deeply with a sharp knife, about 1 cm apart, cutting through the skin but not into the meat.
- Rub the pork belly with olive oil.
- Season the meat side with salt, black pepper, and optional Chinese five-spice powder.
- Place the pork belly skin-side up on a rack over a roasting pan.
- Pour 1 cup of water into the roasting pan.
- Slow roast the pork for 2.5 hours.
- Increase the oven temperature to 240°C (465°F).
- Roast for an additional 30-40 minutes until the skin is golden and crispy.
- Use the grill (broiler) for a few minutes if needed to achieve perfect crackling.
- Let the pork rest for 10 minutes before slicing and serving.
