Delicious Plant-Based Bomb Beet Burgers You’ll Love
Ingredients

- 2 cups Beet (peeled and roughly chopped)
- 3 cloves Garlic (peeled)
- 1 cup Onion (diced)
- 1 can Black Beans (drained and rinsed)
- 2 Tbsp Apple Cider Vinegar
- 2 Tbsp Ground Flaxseed (acts as an egg substitute)
- 2 cups Rolled Oats
- 1 tsp Paprika
- 2 tsp Cumin
- 1 tsp Red Pepper Flakes
- 2 tsp Dried Oregano
- 1/4 tsp Salt
- 1/4 tsp Ground Black Pepper
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Steam the peeled and chopped beets along with the whole garlic cloves in a medium saucepan with 2 tablespoons of water for about 8 minutes or until soft.
- Sauté the diced onion in the medium saucepan with 2 tablespoons of water for 3 minutes.
- Combine all remaining ingredients, including the sautéed onion, in a bowl of a stand mixer.
- Process the cooled beets and garlic in a food processor until smooth, then add this to your stand mixer bowl.
- Mix on low speed until all ingredients are thoroughly combined for about 1 minute.
- Form the mixture into 8 balls, place them on the baking sheet, and flatten each ball into a patty.
- Bake for 20 minutes, then flip and bake for an additional 10 minutes until golden brown.
- Serve warm on whole grain buns or over leafy greens.
