Description
Pistachio pudding cake is a simple cake recipe that uses pistachio pudding mix to create a wonderful pistachio flavor and moist cake texture. A great cake for gatherings and potlucks for all pistachio lovers.

- 1 box cake mix (yellow or white)
- 3.4 ounce pudding mix (pistachio)
- 1 cup sour cream
- 3/4 cup vegetable oil
- 3 large eggs
- 1/2 cup water
- 1 cup pistachio (chopped)
- 1.5 cup powdered sugar
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1/2 cup pistachio (chopped)
Instructions
- Preheat the oven to 350℉.
- Mix together all the ingredients for the cake, then fold in the pistachios. After, pour the batter into the baking pan.
- Bake for 40-50 minutes. Start checking the cake at the 40 minute mark and cook until a toothpick or knife comes out the center clean with very few crumbs.
- When finished baking, remove the cake from the oven and sit on a cooling rack. Mix together the ingredients for the icing. Carefully spread across the hot cake, avoiding pressing too hard.
- Allow the icing to set and the cake to fully cool before serving. When cool, slice and enjoy!
