Description

Pistachio pudding cake is a simple cake recipe that uses pistachio pudding mix to create a wonderful pistachio flavor and moist cake texture. A great cake for gatherings and potlucks for all pistachio lovers.


Ingredients

  • 1 box cake mix (yellow or white)
  • 3.4 ounce pudding mix (pistachio)
  • 1 cup sour cream
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1/2 cup water
  • 1 cup pistachio (chopped)
  • 1.5 cup powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup pistachio (chopped)

Instructions

  1. Preheat the oven to 350℉.
  2. Mix together all the ingredients for the cake, then fold in the pistachios. After, pour the batter into the baking pan.
  3. Bake for 40-50 minutes. Start checking the cake at the 40 minute mark and cook until a toothpick or knife comes out the center clean with very few crumbs.
  4. When finished baking, remove the cake from the oven and sit on a cooling rack. Mix together the ingredients for the icing. Carefully spread across the hot cake, avoiding pressing too hard.
  5. Allow the icing to set and the cake to fully cool before serving. When cool, slice and enjoy!
