Ingredients

Scale
  • 1 cup Unsalted Butter (Melted and browned)

  • 1 teaspoon Baking Powder
  • 1 teaspoon Kosher Salt (A pinch enhances sweetness)
  • 1/2 teaspoon Baking Soda
  • 3/4 cup Dark Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Chopped White Chocolate (For a sweet filling)
  • 1/2 cup Chopped Salted Roasted Pistachios (Plus extra for topping)
  • 1/2 cup Chopped Dark Chocolate (Around 70% cacao)
  • 1/2 cup Pistachio Cream Spread

Instructions

  1. Melt the unsalted butter in a saucepan over medium heat until golden brown. Let it cool completely until solid.
  2. Preheat your oven to 350°F (175°C) and grease a mini muffin tray.
  3. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a larger bowl, beat the cooled butter with dark brown sugar and granulated sugar until light and fluffy. Add the egg and vanilla, mixing well.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the white chocolate, chopped pistachios, and dark chocolate.
  7. Roll the dough into 1-inch balls and press them into the prepared muffin tray.
  8. Bake for 12-14 minutes until edges are set but centers are soft. Use a spoon to create wells.
