These Philly Cheesesteak Stuffed Peppers are a delicious twist on a classic, combining vibrant bell peppers with savory ground beef and gooey Provolone cheese.
Ingredients

- 1 pound Lean ground beef
- 8 ounces Sliced button mushrooms
- 1 medium Chopped onion
- 4 medium Green bell peppers
- 8 ounces Provolone cheese (slices)
- to taste Salt
- to taste Pepper
Instructions
- Prepare the Peppers: Cut the tops off of the green bell peppers and remove the seeds and pith. Microwave for 3-4 minutes.
- Preheat Oven: Set your oven to 350°F and position the rack in the middle.
- Sauté the Vegetables: Heat a pan over medium heat, add olive oil, then cooked mushrooms and onions until tender.
- Cook the Beef: Add lean ground beef to the pan, break it up as it cooks, and mix in the sautéed vegetables, seasoning with salt and pepper.
- Stuff the Peppers: Season the insides of each pepper, add cheese slices at the bottom, and fill with beef mixture.
- Bake and Broil: Bake for 20 minutes, then add remaining cheese on top and broil until melted and bubbly.
