- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 ¾ cups all-purpose flour
- 48 Hershey’s Kisses, unwrapped
- Granulated sugar for rolling the cookies
Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Mix until creamy and well blended.
- Add the eggs, baking soda, salt, and vanilla extract to the peanut butter mixture. Stir until fully combined.
- Gradually add the all-purpose flour, mixing just until the ingredients are combined. Be careful not to overmix.
- Roll the dough into 1-inch balls and then coat each ball in granulated sugar.
- Arrange the dough balls on the prepared baking sheets, ensuring they are spaced about 2 inches apart.
- Place the baking sheets in the preheated oven and bake for 10-12 minutes or until the edges are lightly golden.
- Immediately after removing from the oven, gently press a Hershey’s Kiss into the center of each cookie.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to wire racks to cool completely.
- These cookies are best enjoyed fresh, but they can be stored in an airtight container for up to a week.
