- 12 ounces Rigatoni
- 8 ounces Baby Bella mushrooms
- 1 pound Bulk mild Italian sausage
- 2 tablespoons Olive oil
- 1 medium Onion
- 2 cloves Garlic
- 1/2 cup Dry white wine
- 1 cup Heavy cream
- 1 cup Reserved pasta water
- 1/4 teaspoon Nutmeg
- 1/2 cup Pecorino Romano
- Salt to taste
- Pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente, about 8-10 minutes.
- In a large skillet over medium heat, heat olive oil. Add Italian sausage and cook until browned, about 5-7 minutes.
- Add mushrooms to the skillet and cook until golden brown, about 4-5 minutes.
- Add onion and garlic to the skillet. Sauté for 2 minutes until onions are soft and translucent.
- Pour in white wine and simmer for 3-4 minutes, scraping up browned bits.
- Stir in heavy cream and bring to a gentle simmer. Reduce heat to low.
- Drain pasta, reserving 1 cup of pasta water. Add drained pasta to the skillet with the sauce.
- Mix pasta with sauce, adding reserved pasta water as needed to reach desired consistency.
- Stir in Pecorino Romano, nutmeg, salt, and pepper.
- Serve hot, with extra cheese if desired.
Notes
- For freshness, add chopped parsley before serving.
- Store leftovers in an airtight container for up to 3 days.
- Freeze for longer storage in portioned airtight containers for up to 2 months.
- Reheat gently on the stove, adding a splash of cream or pasta water to restore consistency.
