Description

Ingredients

  • 1 ½ lbs baby potatoes (golden or red)
  • 3 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • ½ cup sour cream
  • ½ cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill (or fresh dill, finely chopped)
  • Salt and black pepper to taste

Instructions

  1. Boil the Potatoes: Boil potatoes in salted water for 15-20 minutes, or until fork-tender. Drain and cool.
  2. Preheat the Oven: Preheat oven to 425°F (220°C). Line a baking sheet.
  3. Smash the Potatoes: Place potatoes on the baking sheet. Flatten each potato.
  4. Season and Oil: Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and pepper.
  5. First Bake: Roast for 20 minutes.
  6. Add Parmesan: Sprinkle Parmesan cheese over potatoes.
  7. Second Bake: Return to the oven and bake for 10-15 minutes, or until crispy and golden brown.
  8. Mix the Dip Ingredients: Whisk together sour cream, Greek yogurt, garlic, lemon juice, olive oil, and dill. Season with salt and pepper.
  9. Chill the Dip: Refrigerate for at least 20 minutes.
  10. Garnish and Plate: Transfer potatoes to a platter and garnish with parsley.
  11. Serve with Garlic Dip: Serve dip alongside the potatoes.
