  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • Fresh parsley, for garnish (optional)

Instructions

  1. Rinse the chicken thighs under cold water and pat them dry with paper towels. Set aside.
  2. In a large bowl, combine the smoked paprika, garlic powder, onion powder, dried oregano, salt, black pepper, olive oil, and lemon juice. Mix well until a paste forms.
  3. Coat each chicken thigh with the paprika mixture, ensuring it’s evenly distributed. Cover and let marinate in the refrigerator for at least 1 hour (preferably overnight for intensifying flavors).
  4. When ready to cook, preheat your oven to 425°F (220°C).
  5. Place the marinated chicken thighs in a large baking dish or on a baking sheet, skin-side up.
  6. Roast in the preheated oven for about 45-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  7. If desired, baste the chicken with the pan juices halfway through cooking for extra moisture.
  8. Once cooked, remove the chicken from the oven and let it rest for 10 minutes to allow the juices to redistribute.
  9. If you like, sprinkle with fresh parsley before serving for a pop of color.
