- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice
- Fresh parsley, for garnish (optional)
Instructions
- Rinse the chicken thighs under cold water and pat them dry with paper towels. Set aside.
- In a large bowl, combine the smoked paprika, garlic powder, onion powder, dried oregano, salt, black pepper, olive oil, and lemon juice. Mix well until a paste forms.
- Coat each chicken thigh with the paprika mixture, ensuring it’s evenly distributed. Cover and let marinate in the refrigerator for at least 1 hour (preferably overnight for intensifying flavors).
- When ready to cook, preheat your oven to 425°F (220°C).
- Place the marinated chicken thighs in a large baking dish or on a baking sheet, skin-side up.
- Roast in the preheated oven for about 45-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- If desired, baste the chicken with the pan juices halfway through cooking for extra moisture.
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes to allow the juices to redistribute.
- If you like, sprinkle with fresh parsley before serving for a pop of color.
