- 36 units fresh oysters in the shell (washed and ready)
- 2 pounds kosher salt (to stabilize shells)
- 1 medium onion (finely chopped)
- 1/2 cup butter (cubed)
- 9 ounces fresh spinach (torn)
- 1 cup grated Romano cheese
- 1 tablespoon lemon juice
- 1/8 teaspoon pepper
Instructions
- In a large skillet, melt the butter over medium heat and add the finely chopped onion. Sauté until the onions are tender and golden.
- Stir in the torn spinach and cook, stirring frequently, until wilted and vibrant in color.
- Remove the skillet from the heat. Mix in the grated Romano cheese, lemon juice, and pepper until well combined.
- Spread the kosher salt evenly into two ungreased 15x10x1-in. baking pans.
- Carefully shuck the oysters, ensuring you reserve the oyster and its liquid in the bottom shell.
- Lightly press the oyster shells into the salt, ensuring they stay level.
- Spoon 2-1/2 teaspoons of the spinach mixture onto each oyster.
- Place the pans in a preheated oven at 450°F. Bake uncovered for about 6-8 minutes, or until the oysters are plump and the cheese is bubbly and golden.
- Once out of the oven, serve the Oysters Rockefeller hot.
