  • 2 pounds kosher salt (to stabilize shells)
  • 1 medium onion (finely chopped)
  • 1/2 cup butter (cubed)
  • 9 ounces fresh spinach (torn)
  • 1 cup grated Romano cheese
  • 1 tablespoon lemon juice
  • 1/8 teaspoon pepper

Instructions

  1. In a large skillet, melt the butter over medium heat and add the finely chopped onion. Sauté until the onions are tender and golden.
  2. Stir in the torn spinach and cook, stirring frequently, until wilted and vibrant in color.
  3. Remove the skillet from the heat. Mix in the grated Romano cheese, lemon juice, and pepper until well combined.
  4. Spread the kosher salt evenly into two ungreased 15x10x1-in. baking pans.
  5. Carefully shuck the oysters, ensuring you reserve the oyster and its liquid in the bottom shell.
  6. Lightly press the oyster shells into the salt, ensuring they stay level.
  7. Spoon 2-1/2 teaspoons of the spinach mixture onto each oyster.
  8. Place the pans in a preheated oven at 450°F. Bake uncovered for about 6-8 minutes, or until the oysters are plump and the cheese is bubbly and golden.
  9. Once out of the oven, serve the Oysters Rockefeller hot.
