- 2 1/2 to 3 lbs Bone-in, Skin-on Chicken
- Sea Salt & Ground Black Pepper
- 3 Medium Shallots
- 20 to 25 Whole Garlic Cloves
- 1 small bunch Fresh Thyme
- 3 to 4 sprigs Fresh Rosemary
- 1/4 cup Avocado or Olive Oil
- 1/2 cup Chicken Broth
- 1/2 cup White Wine
Instructions
- Preheat your oven to 400°F (204°C).
- Line a large casserole dish with Reynolds Wrap® Heavy Duty Foil.
- Spread sliced shallots and half the garlic cloves on the bottom of the dish.
- Place seasoned chicken skin-side up in the dish, then drizzle with oil and season with salt and pepper.
- Scatter the remaining garlic cloves and fresh herbs over the chicken.
- Pour chicken broth and white wine around the chicken carefully.
- Roast uncovered for about 1 hour until the skin is golden and crispy, reaching an internal temperature of 165°F (74°C).
- Spoon the delicious pan sauce over the chicken before serving.
