Ingredients

  • 1 lb chicken breasts, diced
  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 1 bell pepper, diced (any color)
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup frozen corn
  • 1 cup black beans, drained and rinsed
  • 2 teaspoons taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnishing
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the diced chicken to the skillet, seasoning it with salt and pepper. Cook until it’s browned and cooked through, about 5-7 minutes.
  3. Add the chopped onion and bell pepper to the skillet. Sauté until they are softened and fragrant, about 3-4 minutes.
  4. Stir in the garlic powder, taco seasoning, cumin, and chili powder, ensuring the chicken and vegetables are thoroughly coated with the spices.
  5. Pour in the rice and stir until it’s well mixed with the chicken and vegetables.
  6. Add the chicken broth and the can of diced tomatoes. Bring the mixture to a boil, then reduce to low heat.
  7. Stir in the frozen corn and black beans, mixing everything well.
  8. Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquids.
  9. Fluff the rice with a fork and ensure everything is fully cooked. Add more liquid if the rice appears too dry.
  10. Remove from heat and garnish with fresh cilantro. Serve with lime wedges for an extra zing!
