One-Skillet Mexican Chicken and Rice is a flavorful and convenient dish that combines chicken, rice, and spices in one pan.

- 1 lb chicken breasts, diced
- 1 cup long-grain rice
- 1 medium onion, chopped
- 1 bell pepper, diced (any color)
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen corn
- 1 cup black beans, drained and rinsed
- 2 teaspoons taco seasoning
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- ½ teaspoon chili powder
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh cilantro, for garnishing
- Lime wedges, for serving
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the diced chicken to the skillet, seasoning it with salt and pepper. Cook until it’s browned and cooked through, about 5-7 minutes.
- Add the chopped onion and bell pepper to the skillet. Sauté until they are softened and fragrant, about 3-4 minutes.
- Stir in the garlic powder, taco seasoning, cumin, and chili powder, ensuring the chicken and vegetables are thoroughly coated with the spices.
- Pour in the rice and stir until it’s well mixed with the chicken and vegetables.
- Add the chicken broth and the can of diced tomatoes. Bring the mixture to a boil, then reduce to low heat.
- Stir in the frozen corn and black beans, mixing everything well.
- Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquids.
- Fluff the rice with a fork and ensure everything is fully cooked. Add more liquid if the rice appears too dry.
- Remove from heat and garnish with fresh cilantro. Serve with lime wedges for an extra zing!
