Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for another 2 minutes, allowing the flavors to meld.
- Pour in the vegetable or chicken broth and bring to a boil. Add the pasta, dried basil, dried oregano, and red pepper flakes, if using. Stir well to combine.
- Reduce the heat to a simmer and cover the pot. Cook for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
