Instructions

  1. In a large pot, add the uncooked pasta and vegetable broth. Bring to a boil over medium heat.
  2. Stir the pasta occasionally to ensure even cooking and prevent sticking. Cook for about 7-10 minutes or until al dente.
  3. Reduce the heat to low and stir in the pumpkin puree, mixing until well combined.
  4. Gradually add the milk while stirring, then mix in the cheddar cheese and Parmesan cheese until melted and creamy.
