  • Zest and juice of 1 large lemon
  • 4 cups chicken or vegetable broth
  • 8 ounces burrata cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up into smaller pieces with a spatula.
  2. Stir in minced garlic and red pepper flakes. Cook for about 1-2 minutes until fragrant.
  3. Add the chopped broccoli rabe to the pot, tossing to coat in the sausage mixture. Cook for another 2-3 minutes.
  4. Pour in the dry pasta, followed by the broth, lemon zest, and lemon juice. Stir well to combine all ingredients.
  5. Bring the mixture to a boil. Then reduce heat to a simmer. Cover and cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally.
  6. If the pasta absorbs too much liquid before it’s cooked through, splash in a bit more broth or water.

  8. Gently tear the burrata into pieces and add on top of the pasta. Allow it to melt slightly into the warm pasta.
