Description

  • 2 tablespoons unsalted butter
  • 12 ounces cremini mushrooms, thickly sliced
  • 1/2 medium sweet onion, diced
  • 1 pound lean ground beef
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 3 tablespoons all-purpose flour
  • 1/4 cup dry white wine (optional)
  • 4 cups low-sodium beef stock
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 8 ounces uncooked egg noodles
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley, for garnish
  • Kosher salt and black pepper, to taste

Instructions

  1. In a large deep skillet or Dutch oven, melt the butter over medium heat. Add the sliced mushrooms and diced onion. Cook, stirring occasionally, for 4 to 5 minutes until mushrooms are golden and onions are soft. Season lightly with salt and black pepper.
  2. Add the ground beef to the skillet. Cook for 4 to 5 minutes, breaking up the meat, until no pink remains. Season again with salt and pepper.
  3. Stir in the minced garlic and dried thyme. Cook for 1 minute until fragrant.
  4. Sprinkle the flour over the beef mixture. Stir well and cook for 1 to 2 minutes to create a roux.
  5. Pour in the white wine (if using) and scrape up browned bits from the bottom. Simmer for 1 minute.
  6. Stir in the beef stock, Worcestershire sauce, and Dijon mustard. Mix well.
  7. Add the uncooked egg noodles and stir to spread them evenly.
  8. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 9 to 10 minutes, stirring occasionally, until noodles are tender and most liquid is absorbed.
  9. Turn off the heat. Stir in the sour cream until the sauce is smooth. Taste and adjust seasoning.
  10. Sprinkle with fresh parsley and serve hot.
