Delicious Oatmeal Cream Pies that beat fast food every time.
Ingredients

- 1 cup salted butter (softened)
- 3/4 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3 cups quick or old-fashioned oats
- 8 ounces cream cheese (softened)
- 2 Tablespoons heavy cream or whole milk
- 1 teaspoon vanilla
- 3 cups powdered sugar
Instructions
- Preheat your oven to 350°F and line two large baking sheets with parchment paper.
- Cream the softened butter with both sugars in a mixing bowl until light and fluffy. Add in the eggs and vanilla, and beat until combined.
- Mix in the flour, baking soda, cinnamon, and salt to the creamy mixture. Stir gently and fold in the oats.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing at least 2 inches apart. Aim for 32 cookies.
- Bake for 10 to 12 minutes until golden brown. Allow to cool on the sheet for about 5 minutes before transferring to a wire rack.
- Prepare the cream cheese filling by beating softened cream cheese until creamy. Add heavy cream and vanilla, mixing in powdered sugar until lump-free.
- Assemble your pies by piping about 2 tablespoons of filling onto the bottom of one cookie, topping with another cookie. Repeat with remaining cookies.
