  • 8 ounces cream cheese (softened)
  • 2 Tablespoons heavy cream or whole milk
  • 1 teaspoon vanilla
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F and line two large baking sheets with parchment paper.
  2. Cream the softened butter with both sugars in a mixing bowl until light and fluffy. Add in the eggs and vanilla, and beat until combined.
  3. Mix in the flour, baking soda, cinnamon, and salt to the creamy mixture. Stir gently and fold in the oats.
  4. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing at least 2 inches apart. Aim for 32 cookies.
  5. Bake for 10 to 12 minutes until golden brown. Allow to cool on the sheet for about 5 minutes before transferring to a wire rack.
  6. Prepare the cream cheese filling by beating softened cream cheese until creamy. Add heavy cream and vanilla, mixing in powdered sugar until lump-free.
  7. Assemble your pies by piping about 2 tablespoons of filling onto the bottom of one cookie, topping with another cookie. Repeat with remaining cookies.
