- 2 cobs Corn (freshly shaved kernels provide a sweet and smoky taste)
- 15 ml Frying oil (choose a light oil)
- 45 ml Chilli oil (adds a spicy kick)
- 3 tbsp White miso paste (this savory base adds depth)
- 1 Lime zest (for a burst of freshness)
- 2 tbsp Lime juice (enhances flavor profile)
- 2 tsp Maple syrup (offers subtle sweetness)
- 100 g Tenderstem broccoli (provides a nutritious crunch)
- 200 g Dry ramen noodles (the star of the dish)
- Roasted peanuts (optional for added crunch)
Instructions
- Preheat a large skillet or heavy frying pan over medium heat. Add frying oil, then toss in corn kernels. Pan fry until corn is opaque and charred, about 5-7 minutes.
- Boil a large pot of salted water. Chop tenderstem broccoli into bite-sized pieces. Blanch broccoli in boiling water for about 4 minutes, then set aside.
- Cook ramen noodles in the same pot of boiling water. Reserve a quarter cup of noodle cooking water before draining the noodles.
- Combine dressing ingredients in a bowl: chilli oil, miso paste, lime zest, lime juice, maple syrup, and hot noodle cooking water. Whisk until smooth.
- Toss drained noodles with the miso dressing until well coated. Plate noodles, top with charred corn and blanched broccoli. Serve with roasted peanuts on top.
