Irresistible Mini Party Poblano Quesadillas for Quick Fun

- 4 pieces Fresh poblano chiles (roasted until charred)
- 2 tablespoons Vegetable oil (for sautéing and frying)
- 1 medium White onion (sauté until translucent)
- 1 cup Corn kernels (fresh or frozen)
- 1/2 cup Sour cream (for creaminess)
- 4 ounces Cream cheese (for a smooth texture)
- 2 cups Shredded Monterrey jack cheese (melts beautifully)
- to taste pinch Kosher salt
- to taste pinch Fresh ground black pepper
- 6 large Jumbo flour tortillas (cut into rounds)
Instructions
- Roast the poblanos directly over a gas flame or under the broiler until blackened, about 8-10 minutes. Seal in a plastic bag to steam for 10 minutes.
- Peel off the skins, remove the stem and seeds, and slice into strips.
- In a skillet, heat oil and sauté onions until translucent. Add corn, cooking for another 5 minutes, then add poblano strips and sauté for 5 more minutes.
- Mix in sour cream and cream cheese until melted. Stir in Monterrey jack cheese and season with salt and pepper.
- Fill tortillas with the mixture, fold, and fry in a skillet until golden brown on both sides.
- Serve immediately or cool, then freeze for future use.
