  • 1/4 cup Parsley (fresh, chopped)
  • 1 medium Yellow Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 large Egg (beaten)
  • 1/4 cup Flour (all-purpose)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Freshly Cracked Pepper
  • 1 medium Red Onion (thinly sliced)
  • 1 tablespoon Sugar (or Maple Syrup)
  • 1/2 teaspoon Salt
  • 1 cup Hot Water
  • 1/2 cup White Vinegar
  • 4 pieces Mini Pita Bread
  • 1/4 cup Fresh Mint Leaves (for garnish)

Instructions

  1. Preheat your oven to 375°F.
  2. Combine all ingredients for the falafel in a food processor. Pulse until well mixed.
  3. Form mini balls using a teaspoon from the falafel mixture. Place them on a parchment-lined baking sheet.
  4. Bake the falafel for 15 minutes, or until lightly browned.
  5. Add sugar and salt to a large mouth mason jar.
  6. Mix in hot water and vinegar until dissolved.
  7. Add sliced red onions to the jar and shake gently.
  8. Top each mini pita with tzatziki, pickled red onions, a fresh mint leaf, and one mini falafel.
