Delicious Mini Falafel Bites with Tzatziki and Pickled Red Onions are a flavorful and healthy appetizer.
Ingredients

- 1 cup Chickpeas (cooked and drained)
- 1/4 cup Cilantro (fresh, chopped)
- 1/4 cup Parsley (fresh, chopped)
- 1 medium Yellow Onion (chopped)
- 2 cloves Garlic (minced)
- 1 large Egg (beaten)
- 1/4 cup Flour (all-purpose)
- 1 teaspoon Baking Powder
- 1 teaspoon Cumin
- 1/2 teaspoon Salt
- 1/4 teaspoon Freshly Cracked Pepper
- 1 medium Red Onion (thinly sliced)
- 1 tablespoon Sugar (or Maple Syrup)
- 1/2 teaspoon Salt
- 1 cup Hot Water
- 1/2 cup White Vinegar
- 4 pieces Mini Pita Bread
- 1/4 cup Fresh Mint Leaves (for garnish)
Instructions
- Preheat your oven to 375°F.
- Combine all ingredients for the falafel in a food processor. Pulse until well mixed.
- Form mini balls using a teaspoon from the falafel mixture. Place them on a parchment-lined baking sheet.
- Bake the falafel for 15 minutes, or until lightly browned.
- Add sugar and salt to a large mouth mason jar.
- Mix in hot water and vinegar until dissolved.
- Add sliced red onions to the jar and shake gently.
- Top each mini pita with tzatziki, pickled red onions, a fresh mint leaf, and one mini falafel.
