Description
Delightful Microwave Garlic Prawn Po’Boy Sliders combine juicy prawns with creamy spicy mayo, nestled in crispy brioche buns.
Ingredients

- 50 g butter
- 3 tbsp extra virgin olive oil
- 1 tsp chilli flakes
- 2 cloves garlic, finely chopped
- 0.5 tsp sea salt
- 12 medium-sized prawns, peeled, deveined
- 4 mini brioche burger buns, halved
- 1 cup finely sliced cos lettuce
- 0.25 cup mayonnaise
- 1 tbsp sriracha or your choice of hot sauce
Instructions
- In a small bowl, combine the mayonnaise and sriracha. Mix well until smooth, then set it aside to let the flavors meld together.
- In a large microwave-safe bowl, combine the butter, olive oil, chilli flakes, garlic, and sea salt. Microwave at 600W for 2 minutes until the butter is melted.
- Add the prawns, then microwave at 400W for 4-5 minutes until they turn pink and opaque. Don’t forget to remove the tails afterward!
- Place the halved brioche buns cut-side down on the microwave’s wire rack. Grill them for 1 minute on high, then flip the buns to face up.
- Brush them with the melted garlic butter from the prawns and grill for an additional 4 minutes until crispy and golden.
- Spread the spicy mayo on the bottom half of each bun. Layer with a handful of lettuce and three garlic prawns on each.
- Add more spicy mayo to the top half of the buns and gently press down to close. Serve your sliders while they’re warm!
