Description
This Mediterranean Steak Bowl features tender marinated sirloin steak paired with fresh vegetables, creamy tzatziki, and a bright lemon vinaigrette. It’s a healthy and easy steak bowl recipe inspired by Greek flavors.
Ingredients
- 450g sirloin steak, about 2.5cm thick
- 45ml olive oil
- 2 garlic cloves, minced
- 15ml fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 480ml cooked grains (brown rice, quinoa, or cauliflower rice)
- 240ml roasted chickpeas (optional)
- 240ml cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- 120ml kalamata olives, pitted
- 80ml crumbled feta cheese (optional)
- 60ml fresh herbs (parsley or dill), chopped
- 240ml plain Greek yogurt (or coconut yogurt for dairy-free)
- ½ cucumber, grated and squeezed dry
- 15ml fresh lemon juice
- 1 garlic clove, minced
- 15ml fresh dill, chopped
- Salt and pepper to taste
- 45ml olive oil
- 30ml fresh lemon juice
- 5ml honey (omit for dietary restrictions)
- 1 garlic clove, minced
- ½ teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat steak thoroughly with marinade and refrigerate for 30 minutes to 4 hours for optimal flavor development.
- Mix Greek yogurt, grated cucumber (squeezed to remove excess moisture), lemon juice, minced garlic, chopped dill, salt and pepper in a bowl. Refrigerate until ready to serve.
- Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt and pepper until thoroughly combined and slightly emulsified.
- Heat a cast iron skillet or grill pan over high heat. Sear steak for 4-5 minutes per side for medium-rare, adjusting time according to thickness and desired doneness. Rest for 5-10 minutes before slicing thinly against the grain.
- Start with a base of cooked grains, arrange sliced steak and toppings in sections. Drizzle with tzatziki and lemon vinaigrette just before serving.
