- In a mixing bowl, whisk together the maple syrup, balsamic vinegar, Dijon mustard, olive oil, shallots, garlic, thyme, salt, pepper, and cayenne until combined, creating a flavorful marinade.
- Place the pork tenderloins in a baking dish, generously covering them with the marinade. Seal with plastic wrap and refrigerate overnight, or at least six hours for optimal flavor infusion.
- Remove the marinated pork from the refrigerator and let it sit for 30 minutes to reach room temperature. Meanwhile, preheat your oven to 375°F (190°C). Wipe off excess marinade from the pork, reserving it for later use.
- Heat a splash of olive oil in a large oven-safe skillet over medium-high heat. Sear the tenderloins for about 2 minutes per side, or until a golden brown crust forms.
- Pour the reserved marinade into the skillet, allowing it to simmer for about 1 minute. Use a spoon to baste the tenderloins with the sauce.
- Cover the skillet with foil and roast the pork in the preheated oven for 15 minutes. Remove the foil, baste with the pan juices, and continue cooking for an additional 5 minutes, or until its internal temperature reaches 145°F (63°C).
- Tent the cooked pork loosely with foil and let it rest for 5 minutes. Slice it into medallions and serve drizzled with the delightful pan sauce.
