Mango Dream Bars are a refreshing tropical dessert that combines a buttery crust with a vibrant mango filling.

- 1 cup All-Purpose Flour
- 1/2 cup Unsalted Butter
- 1/4 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Salt
- 2 cups Mango Puree
- 3 large Eggs
- 1/4 cup Cornstarch
- 2 tablespoons Lemon Juice
- 1/4 cup Shredded Coconut
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
- In a mixing bowl, combine flour, sugar, and salt. Add butter and vanilla, mixing until crumbly. Press into the bottom of the pan.
- Bake for 12-15 minutes until lightly golden. Allow to cool slightly.
- In a saucepan, whisk together mango puree, sugar, cornstarch, lemon juice, and salt. Cook on medium heat, stirring until thickened, about 5-7 minutes.
- Remove from heat, let cool slightly, then stir in eggs and vanilla until smooth.
- Pour the mango filling over the cooled crust, spreading evenly.
- Bake for an additional 20-25 minutes until filling is set and slightly golden.
- Let cool to room temperature, then refrigerate for 1-2 hours.
- Cut into squares when ready to serve.
Notes
- For a gluten-free version, substitute all-purpose flour with gluten-free flour.
- Brown sugar can be used for a deeper flavor.
- Use fresh or frozen mangoes for the best taste.
- Lime juice can replace lemon juice for a different flavor.
- Shredded coconut can be omitted if desired.
