Ingredients

  • 1/2 cup Unsalted Butter
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 2 cups Mango Puree
  • 3 large Eggs
  • 1/4 cup Cornstarch
  • 2 tablespoons Lemon Juice
  • 1/4 cup Shredded Coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  2. In a mixing bowl, combine flour, sugar, and salt. Add butter and vanilla, mixing until crumbly. Press into the bottom of the pan.
  3. Bake for 12-15 minutes until lightly golden. Allow to cool slightly.
  4. In a saucepan, whisk together mango puree, sugar, cornstarch, lemon juice, and salt. Cook on medium heat, stirring until thickened, about 5-7 minutes.
  5. Remove from heat, let cool slightly, then stir in eggs and vanilla until smooth.
  6. Pour the mango filling over the cooled crust, spreading evenly.
  7. Bake for an additional 20-25 minutes until filling is set and slightly golden.
  8. Let cool to room temperature, then refrigerate for 1-2 hours.
  9. Cut into squares when ready to serve.

  • For a gluten-free version, substitute all-purpose flour with gluten-free flour.
  • Brown sugar can be used for a deeper flavor.
  • Use fresh or frozen mangoes for the best taste.
