Ingredients
- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar

- 1 cup celery, finely chopped
- 1/2 cup red bell pepper, finely chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup frozen peas, thawed

Instructions
- Cook the elbow macaroni according to the package directions. Drain and rinse with cold water to cool it down.
- In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
- Add the cooked macaroni, chopped celery, bell pepper, red onion, peas, and pickles (if using) to the bowl with the dressing.
- Stir gently to combine all ingredients, making sure everything is well-coated with the dressing.
- Chill the salad in the refrigerator for at least 1 hour before serving to allow the flavors to blend.
