Ingredients

  • 3 pounds russet or Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • ¾ cup warm milk or heavy cream
  • Salt, to taste
  • Black pepper, to taste
  • 1½ cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • ¼ cup sour cream
  • ¼ cup green onions or chives, chopped

Instructions

  1. Place cubed potatoes in a large pot. Cover with cold salted water. Bring to a boil and cook until fork-tender. Drain well and return to the pot.
  2. Add butter to hot potatoes. Mash until smooth. Gradually pour in warm milk or cream. Season with salt and black pepper. Mix until fluffy and creamy.
  3. Cook bacon until crispy and crumble. Shred cheese if not pre-shredded. Chop green onions or chives.
  4. Spoon mashed potatoes into bowls. Top with shredded cheese, bacon, sour cream, and green onions. Serve immediately while hot.
