Ingredients

- 3 pounds russet or Yukon Gold potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- ¾ cup warm milk or heavy cream
- Salt, to taste
- Black pepper, to taste
- 1½ cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- ¼ cup sour cream
- ¼ cup green onions or chives, chopped
Instructions
- Place cubed potatoes in a large pot. Cover with cold salted water. Bring to a boil and cook until fork-tender. Drain well and return to the pot.
- Add butter to hot potatoes. Mash until smooth. Gradually pour in warm milk or cream. Season with salt and black pepper. Mix until fluffy and creamy.
- Cook bacon until crispy and crumble. Shred cheese if not pre-shredded. Chop green onions or chives.
- Spoon mashed potatoes into bowls. Top with shredded cheese, bacon, sour cream, and green onions. Serve immediately while hot.
