  • 3/4 cup Warm whole milk
  • 2 tablespoons Honey
  • 3.5 cups All-purpose flour (adjust for stickiness)
  • 1/4 teaspoon Cardamom
  • 1/2 teaspoon Kosher salt
  • 3 Large eggs (at room temperature)
  • 1/2 cup Salted butter (melted)
  • 23 tablespoons Lemon zest
  • 3/4 cup Granulated sugar
  • 6 tablespoons Softened butter
  • 8 ounces Cream cheese (at room temperature)
  • 4 tablespoons Softened butter
  • 1/21 cup Powdered sugar (to achieve desired sweetness)
  • 2 teaspoons Vanilla extract

Instructions

  1. In the bowl of a stand mixer fitted with the dough hook, mix the warm milk, yeast, and honey. Let it rest for 5-10 minutes, until bubbly.
  2. Add 3 ½ cups of flour, cardamom, salt, eggs, melted butter, and 1 tablespoon of lemon zest. Mix for about 4-5 minutes until the dough is smooth; add more flour if sticky.
  3. Cover the bowl with a clean cloth and let the dough rise for 1 hour or until doubled in size.
  4. In a small bowl, mix sugar and the remaining lemon zest. Line a 9×13 inch baking dish with parchment paper.
  5. Lightly flour your work surface, then punch down the dough. Roll into a 10 x 16 inch rectangle. Spread 6 tablespoons of softened butter on top, then sprinkle the lemon sugar evenly.
  6. Roll the dough tightly from the long edge closest to you, pinch to seal, and cut into 12-16 rolls. Place them in the prepared dish, cover, and let rise for 20-30 minutes or refrigerate overnight.
  7. Preheat your oven to 375°F and bake the rolls for 20-25 minutes, until they are golden brown.
  8. In a bowl, beat together cream cheese, butter, powdered sugar, and vanilla until light and creamy.
  9. Spread the warm rolls with the luscious icing and serve while warm. Enjoy every heavenly bite!
