  • 4 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Begin by preparing the chicken. In a small bowl, mix together lemon zest, lemon juice, black pepper, and salt to create the lemon pepper seasoning.
  2. Rub the seasoning mixture over the chicken breasts evenly, ensuring both sides are well-coated.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts.
  4. Cook the chicken for about 7-8 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the outside is golden brown.
  5. While the chicken is cooking, heat another 2 tablespoons of olive oil in a separate skillet over medium heat.
  6. Add the sliced zucchini to the skillet, season with salt and pepper, and sauté for about 5-7 minutes, or until they are tender-crisp. Halfway through, add the minced garlic to the zucchini for added flavor.
