  • 1 teaspoon lemon juice
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 150 grams fresh mozzarella (or ½ to cup shredded firm mozzarella)
  • 1 tablespoon lemon juice
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare your pizza dough, shaping it into a 9×13 inch oval or rectangle on parchment paper. Create dimples across the surface with your fingertips.
  2. Combine olive oil, water, parsley, grated garlic, lemon zest, lemon juice, salt, and pepper in a small jar. Shake vigorously until emulsified.
  3. Pour the lemon brine evenly over the dimpled dough.
  4. Distribute pieces of fresh mozzarella across the surface. If using fresh mozzarella, pat it dry with paper towels first.
  5. Carefully transfer the pizza to a preheated pizza stone or inverted baking sheet.
  6. Bake until the crust is golden brown and the cheese is bubbly, about 8-10 minutes.
