Ingredients
- For the Dough:
- 3 ½ cups (440g) all-purpose flour, spooned and leveled
- 2 ¼ teaspoons (1 packet) active dry yeast
- ¾ cup (180ml) dairy-free milk, warmed
- ¼ cup (60g) dairy-free yogurt
- ¼ cup (50g) granulated sugar
- ¼ cup (55g) vegan butter or regular unsalted butter, melted
- Zest of 1 lemon
- Juice of ½ lemon (about 1 tablespoon)
- ½ teaspoon sea salt
- For the Blueberry Filling:
- 1 cup (240g) blueberry preserves or jam
- 1 tablespoon cornstarch (optional, for thickening)
- For the Lemon Cream Cheese Glaze:
- ½ cup (112g) vegan cream cheese or regular cream cheese, softened
- ¾ cup (90g) powdered sugar
- 1–2 tablespoons fresh lemon juice
- Zest of ½ lemon
Instructions
- Prepare the Dough: Combine warm milk and yeast; let sit until foamy. Add sugar, lemon zest, lemon juice, yogurt, and melted butter. Gradually add flour and salt. Mix until a sticky dough forms, then knead for 8-10 minutes until smooth and elastic.
- First Rise: Place dough in an oiled bowl, cover, and let rise in a warm place for 60-90 minutes, or until doubled.
- Prepare the Filling: Warm blueberry jam slightly; stir in cornstarch if using. Let cool.
- Roll Out the Dough: Punch down risen dough. On a floured surface, roll into an 18×12 inch rectangle. Spread blueberry filling evenly, leaving a border.
- Roll and Slice: Tightly roll the dough from the long side. Slice into 12 even rolls. Place in a greased baking dish.
- Second Rise: Cover rolls and let rise for 30-45 minutes until puffy. Preheat oven to 350°F (175°C).
- Bake: Bake for 25-30 minutes until golden. Cool for 10-15 minutes.
- Make the Glaze: Beat cream cheese until smooth. Add powdered sugar, lemon juice, and lemon zest. Mix until creamy.
- Glaze the Rolls: Spoon or drizzle glaze over warm rolls. Serve immediately.
