Crispy Lasagne Fritti: A Delicious Twist on a Classic Dish


Ingredients

  • 1 cup Dried White Breadcrumbs
  • 1/4 cup Semolina
  • Zest of ½ Unwaxed Lemon
  • 1 tsp Dried Oregano
  • 1/2 cup Parmigiano Reggiano
  • 1 pack No.1 Beef Lasagne
  • 1/2 cup Plain Flour
  • 2 British Blacktail Free Range Medium Eggs
  • 1 can Spray Cooking Oil
  • Thyme Sprigs (Optional garnish)

Instructions

  1. Preheat the oven to 190ºC (gas mark 5).
  2. Cut the lasagne into 12 evenly sized pieces.
  3. Mix together the breadcrumbs, semolina, lemon zest, oregano, and grated Parmigiano Reggiano on a large plate.
  4. Prepare the flour on a separate plate and beat the eggs in a large bowl.
  5. Dip each lasagne piece into the flour first, then into the egg, and finally into the breadcrumb mixture.
  6. Transfer the coated pieces to a baking sheet.
  7. Spray each piece lightly with cooking oil.
  8. Bake in the oven for 20-25 minutes, turning halfway through.
  9. Serve your Lasagne Fritti on a platter, topping with more grated parmesan and thyme sprigs if desired.
