Crispy Lasagne Fritti: A Delicious Twist on a Classic Dish

- 1 cup Dried White Breadcrumbs
- 1/4 cup Semolina
- Zest of ½ Unwaxed Lemon
- 1 tsp Dried Oregano
- 1/2 cup Parmigiano Reggiano
- 1 pack No.1 Beef Lasagne
- 1/2 cup Plain Flour
- 2 British Blacktail Free Range Medium Eggs
- 1 can Spray Cooking Oil
- Thyme Sprigs (Optional garnish)
Instructions
- Preheat the oven to 190ºC (gas mark 5).
- Cut the lasagne into 12 evenly sized pieces.
- Mix together the breadcrumbs, semolina, lemon zest, oregano, and grated Parmigiano Reggiano on a large plate.
- Prepare the flour on a separate plate and beat the eggs in a large bowl.
- Dip each lasagne piece into the flour first, then into the egg, and finally into the breadcrumb mixture.
- Transfer the coated pieces to a baking sheet.
- Spray each piece lightly with cooking oil.
- Bake in the oven for 20-25 minutes, turning halfway through.
- Serve your Lasagne Fritti on a platter, topping with more grated parmesan and thyme sprigs if desired.
