  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 cup diced dill pickles
  • 1½ cups shredded cheddar cheese
  • 1½ cups shredded mozzarella cheese
  • 1 cup ricotta or cottage cheese
  • 1 large egg
  • ½ cup milk
  • ½ teaspoon smoked paprika
  • Optional toppings: diced tomatoes, shredded lettuce, extra chopped pickles

Instructions

  1. Preheat your oven to 375°F (190°C). Boil the lasagna noodles according to package instructions until tender but firm. Drain and lay flat on parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add ground beef and onion, cooking until the beef is browned and the onion is soft, about 6 to 8 minutes. Stir in garlic, salt, black pepper, ketchup, and mustard, cooking for another 2 minutes. Mix in diced dill pickles.
  3. In a bowl, combine ricotta or cottage cheese, egg, milk, and smoked paprika. Stir until smooth.
